So fun fact about me if you weren’t aware – I don’t eat foods with gluten, dairy, or hydrogenated oils in them. This is a part of my anti-inflammatory diet, which I went on about 2 years ago in order to reduce the inflammation from my inflammatory arthritis.
Obviously, this restricted how much and what I could eat. I have looked for delicious foods that fit this diet for the past 2 years, and haven’t always succeeded. However, I have now found a new favorite.
As you probably guessed from the title of this post, it’s a cupcake success.
Stonewall Kitchen came out with a great gluten-free cupcake mix. It comes with a frosting mix, too! Use dairy-free butter (that’s also free of canola/vegetable oil), and ta-da, you have yourself some cupcakes that fit within an anti-inflammatory diet.
The mix was easy to use, and I was really pleased with the results. I usually don’t like mixes because they use ingredients I’m not supposed to eat and/or I don’t like their creation. However, I was pretty happy with this one.

And I was also impressed with the frosting mix. I’m pretty picky about my frosting, especially because I think that I have the best frosting recipe ever, but this one was pretty great. The only extra ingredients you need are butter and milk, so I just used dairy-free butter and soy milk, and we were good to go.
My mom and I were so excited about the cupcakes that we each ate one before I took the picture.
Overall, I am extremely pleased with them. As was my family – and none of them are on a diet like mine!
