Homemade Chipotle Burrito Bowl

I, like so many others, love Chipotle. Unfortunately, I live at least a 10 minute drive away from the closest one, and they don’t deliver. This means that I started trying to make my own homemade version. It took a few tries, but I’ve finally gotten a recipe down.

Rice – 
– 1 cup of jasmine rice
– 1/4 cup of cilantro
– juice from 1 lime
– 1-2 tbsp butter
– salt to taste

Chicken – 
– 1lb of chicken breast
– olive oil
– fajita mix
– 1/4 cup of water

Extras – 
– sliced onion
– bell pepper
– salsa or chopped tomato

Step 1: Rice 
Get the rice started according to the directions. The difference is that you put the lime juice, butter, and salt in with the rice right from the beginning. After it boils and before you cover it to simmer, add the cilantro, stir once, and then cover to simmer.

Step 2: Chicken 
While the rice is cooking, slice up the chicken into small pieces. Add 1tbsp of olive oil to a skillet, and once it has heated up, add the chicken. Depending on the size of your skillet, you might want to cook the half the chicken at a time. Cook it until it isn’t pink any more. Once it’s done, remove the chicken from the skillet.

Step 3: Extras
Add the onions, peppers, and any other vegetables you want to the skillet, along with another tbsp of olive oil. Cook for another 5-6 minutes. Add the chicken back to the skillet.

Step 4: Sauce 
Add the fajita mix, but only as strong as you want it to be. I use about half the mix, which means I used about half of the water (less than 1/4 of a cup). Cook until the sauce thickens a bit, nicely coating all of the chicken and vegetables.

Step 5: Finish it off!
Rice, chicken, vegetables, all in a bowl! Add the salsa of your choice, or some chopped tomatoes, and enjoy.
