7 Yummy Crockpot Recipes

With my chronic illnesses, I feel best in the morning and usually feel pretty crappy by the end of the day. This means that if I’m going to cook dinner, it’s probably going to be in the crockpot. And THAT means that I’ve accumulated some great recipes! Today I’m sharing 7 yummy crockpot recipes, and most are gluten-free or easily made gluten-free. Enjoy!

7 Yummy Crockpot Recipes

Slow Cooker Tomato, Kale, and Quinoa Soup – This is really similar to a soup that my family LOVES. It’s also a great way to get the nutrition from kale without the icky kale taste. Depending on how long you cook it, it will be very soup-y or more like a stew because of how much liquid the quinoa absorbs. There’s quinoa and beans in this soup, so you get your protein without meat.

Mexican Vegan Stuffed Peppers – This recipe from Happy Healthy Mama is SO yummy! As Maryea says, “This meal has all of my favorite characteristics: it’s healthy, it’s plant-based with vibrant vegetables, and has bold flavor. I also love that it’s hearty enough to fill up even my 6′ 3″ husband. Winning all around.” My sister is a vegetarian, and this is a recipe that I found when she was living with us. It’s easy and delicious; the best combination!

Chicken, Potatoes, and Green Beans – This recipe is from The Magical Slow Cooker and, true to the blog name, this recipe is magical. It’s easy and delicious! As Sarah says in her blog post, “I have seen oven versions of this recipe, but most include an Italian dressing seasoning packet. Instead of using a seasoning packet to flavor the sauce in this dish, I made a simple mixture of olive oil, lemon juice, garlic and dried seasonings.”

Slow Cooker Honey Garlic Chicken & Veggies – This is another one from Damn Delicious! It’s so good that I love the carrots cooked in it, and I don’t like cooked carrots. She provides different chicken options, so you can choose the style of chicken that you like best or is the healthiest. This was a big hit in my family!

Slow Cooker Chicken with Sweet Potatoes and Broccoli – Can you say YUM? Honestly, this is pretty much exactly what we make for most of our dinners: chicken, veggie, and sweet potatoes or rice. There are a lot of really good spices in here, and you can leave out the cayenne if you’re a baby when it comes to spice like me.

Slow Cooker Brown Sugar Garlic Chicken – This is soooo good! Sabrina from Dinner Then Dessert includes notes on changes you can make if you make it in the oven, want to add some spice, or don’t know what to serve it with. If you make it as it is in her blog post, it’s super simple and easy.

Slow Cooker Garlic Parmesan Chicken and Potatoes – I personally don’t use parmesan in this recipe because I don’t eat dairy, but you could also replace it with nutritional yeast. Chungah from Damn Delicious describes this recipe as, “Crisp-tender chicken thighs cooked low and slow right alongside some baby red potatoes before they’re tossed in freshly grated Parmesan.”

Yup, I have heart disease. ⁣
⁣
I've mentioned this in bits and pieces over the last year, but in 2025, I was diagnosed with coronary artery disease.To be clear, I have basically the lowest amount of artery calcification possible to still have heart disease, but I still have it. ⁣
⁣
Coronary artery disease is a complication of rheumatoid arthritis, as cholesterol can be increased by inflammation. As I hung around the border of coronary artery disease, I got COVID. ⁣
⁣
COVID is also an inflammatory condition, which is why research shows that COVID can increase risk of heart disease. ⁣
⁣
We're keeping an eye on it now, and increasing my cholesterol medication has helped keep my cholesterol down. Which is good because I already eat a pretty heart-healthy diet and exercise is tricky for me. ⁣
⁣
If you have an inflammatory condition like RA or Crohn's, you should know that that inflammation can contribute towards cholesterol levels and therefore heart disease, especially if you've had COVID (and every time you get it increases your risks). ⁣

With Rituxan, iron, and IVIG, I spend a lot of time in the infusion chair. That's a lot of time to kill!⁣
